This Chardonnay comes from a single vineyard plot located over 400 metres above sea level in the hills surrounding Mori. Fermentation occurs spontaneously, following two distinct paths: one portion ferments and ages in terracotta amphorae, the other in French oak barriques. After six months the two components are blended to combine mineral purity with aromatic depth.
Brilliant, intense golden yellow. A fine and expressive aromatic profile: ripe fruit (peach, golden apple), white flowers, hints of Mediterranean herbs and light mineral nuances. The oak contributes subtle notes of sweet vanilla and delicate spices, seamlessly integrated. Elegant and harmonious, driven by lively freshness, saline tension and a firm mineral texture. The amphora component adds verticality and precision, while the oak rounds everything out with softness and balance. Clean, long, salty finish.
A refined aperitif, or with grilled, baked or raw fish, delicate risottos, white meats, fresh or semi-aged cheeses. Ideal with vegetarian cuisine, seafood appetizers and light fusion dishes.
